If you walk Canada’s coastline, and you are fit enough to cover 20 km. a day, it would take you exactly 33 years to complete your journey. That is about the same time Judy Eberspaecher has taken to collect, create, taste and organize the recipes along with her research in this book.
With
243 042 kilometers of coastline, the longest in the world, Canada
is a natural choice for seafood. Having grown up close to the sea,
some of Judy’s earliest memories of foods are of scallops, brought
to the door by the local fish peddlers. Eating scallops and collecting
recipes, not only from Canada but virtually every corner of the world
from Alaska to Zanzibar, Judy presents recipes from some of the finest
chefs and establishments worldwide.
An accomplished travel and nature photographer, Judy (Hiltz) Eberspaecher lives in Canada but spends much of her time travelling with her husband Alex, a wine and travel writer, in her search for the perfect dish. You might even find her out on a scallop dragger doing research alongside scientists and local fishermen.
